Paleo Pumpkin Streusel Bars
For the crust
For the crust
- 2 cups almond flour
- 3 tbsp coconut oil, melted
- 1 tsp vanilla extract
- 1 tbsp water
- 1/2 tsp salt
For the filling
- 1 cup pumpkin puree
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ground cloves
For the streusel
- 3 tbsp coconut oil, melted
- 1 tbsp maple syrup
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 1 cup pecans, chopped
Instructions
- Preheat the oven to 350 degrees F. Grease an 8x8-inch baking dish with coconut oil spray. Place all of the ingredients for the crust into a bowl and stir to combine. The dough should form into a ball. Transfer to the baking dish and press into an even layer. Bake for 10 minutes, and then remove from the oven and let cool.
- Mix together the filling ingredients in a small bowl. Spread over the cooled crust in a thin even layer.
- Toss the chopped pecans in a small bowl with the other streusel ingredients. Sprinkle over the top of the filling. Bake everything together for another 15 minutes. Let cool for 10 minutes before serving.
