Raw Paleo Pumpkin Balls
Yield: 20-25 Balls
Ingredients
- 5 Medjool dates, pitted
- 1 cup raw pecans
- 1/2 cup raw pepitas
- 3/4 cup unsweetened flaked coconut
- 3/4 cup pumpkin puree (Make your own)
- 1/2 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- pinch of sea salt
Directions
- Remove pits from dates and process in the food processor until a ball forms.
- Add all remaining ingredients and process 7-10 seconds or until combined.
- Use both hands to roll a teaspoon of the mixture at a time into balls.(The total amount of balls made will depend on the size of your palms if you don't measure about a teaspoon.)
- Transfer balls to a serving dish, sprinkle with sea salt and serve. Store any leftovers in a sealed glass container in the fridge.
